π mama san Soba Noodle Platter with Ginger Soy Dressing Recipe π Prep Time: β±οΈ 5 minutes Cook Time: π₯ 10 minutes Serves: π½οΈ 4 Ingredients: • Noodles & Protein: β¦ 2 bunches mama san soba noodles (160g) - half packet β¦ 1 pack (100g) Farmland hot pork π₯ β¦ 4 Better eggs, boiled for 8 minutes π₯ • Veggies: β¦ 2 radishes, thinly sliced β¦ 1/4 cucumber, sliced into thin ribbons π₯ β¦ 2 spring onions, sliced π± β¦ 1 avocado, sliced π₯ β¦ A handful of baby lettuce π₯¬ β¦ Lemon π • Ginger Soy Dressing: β¦ 1/3 cup DYC apple cider vinegar π β¦ 4 tbsp mama san soy sauce π« β¦ 1 tbsp runny honey π― β¦ 1 tbsp Kuki sesame oil π± β¦ 2 tsp grated fresh ginger π« β¦ 3 tbsp water π§ To Serve: • Lemon wedges π • mama san nori sheets (sushi seaweed), cut in thin strips π£ • mama san Wasabi π • Kewpie Mayonnaise π₯ Method: 1οΈβ£ Noodles: π Prepare soba noodles according to the packet instructions. Rinse well in cold water to stop cooking and set aside. 2οΈβ£ Eggs: π₯ Boil eggs in boiling water for 8 minutes. Transfer immediately to iced water to cool, then peel and cut in halves. 3οΈβ£ Veggie Prep: π₯ Slice radishes, cucumber into ribbons, spring onions, and avocado. Sprinkle lemon juice on the avocado to prevent browning. 4οΈβ£ Dressing: π₯ Mix all ingredients for the ginger soy dressing until well combined. 5οΈβ£ Assemble: π½οΈ Arrange the soba noodles on a platter. Artfully place the pork, egg halves, radishes, cucumber, avocado, and lettuce around and over the noodles. Garnish with herbs, nori strips, and wasabi on the side. π₯’ Teriyaki Chicken Donburi ππ This Teriyaki Chicken Donburi is simple, satisfying healthy comfort food at its best. Juicy chicken glazed in a glossy homemade teriyaki sauce is served over warm sushi rice with crisp veggies, edamame, and a little Kewpie on top. Balanced, nourishing, and full of flavour, it’s an easy weeknight bowl that never disappoints. π Serves 2 Teriyaki Sauce ¼ cup mama san soy sauce ¼ cup mama san sake ¼ cup mama san mirin 1 tbsp sugar (optional) 1. Combine ingredients in a large saucepan over high heat 2. Bring to boil, then turn heat down and simmer until it reduces by half. The consistency should be like a light syrup. The wider the pan, the faster it will reduce so keep an eye on the reduction. For me it takes about 10 minutes. β¨ Teriyaki Chicken Donburi 2 tsp cooking oil 1 large chicken breast 1 tbsp teriyaki sauce 1 tbsp water 2 servings freshly cooked mama san sushi rice π 1 cup mama san shelled edamame, cooked π« β cabbage, finely shredded π₯¬ ½ carrot, julienned π₯ ¼ cup mama san sushi ginger Kewpie mayonnaise 2 tbsp sliced spring onion greens π± S&B nanami/shichimi/7 spice πΆοΈ Extra teriyaki sauce 1. Add the cooking oil to a frying pan and bring to high heat π₯ 2. Brown the chicken on both sides until very golden 3. Reduce to medium-low heat and add 1 tbsp teriyaki sauce and 1 tbsp water 4. Cover with a lid and simmer for 10 minutes or until cooked through. Flip the chicken half way through 5. Transfer to a chopping board and slice ~0.5cm thick. Pour the pan sauce over the chicken π 6. Assemble the donburi bowls starting with the rice, then vegetables, chicken, sushi ginger, a dollop of mayo, spring onions and pour over some extra teriyaki sauce π₯ 7. π₯ Asian Slaw with Crunchy Topping recipe Fresh, crunchy, tangy and absolutely addictive! πΆοΈπ₯ Ingredients For the slaw: π₯¬ 2 cups green cabbage, finely sliced π₯¬ 2 cups red cabbage, finely sliced π₯ 2 large carrots, grated π« 1 red capsicum, sliced π± 3 spring onions, finely sliced πΏ ½ cup fresh coriander, chopped Tangy Asian Dressing: π’οΈ 1 tsp Kuki sesame oil π’οΈ 3 Tbsp vegetable oil πΆ 3 Tbsp mama san rice wine mirin π 3 Tbsp lemon juice π― 3 Tbsp honey π₯’ 1 Tbsp mama san soy sauce π« 1 Tbsp Garden Gourmet ginger paste π§ ½ tsp Garden Gourmet garlic paste πΆοΈ ½ tsp Gourmet Garden chilli paste π§ ½ tsp salt Crunchy Topping: π₯ ¼ cup FreshLife chopped peanuts πΎ 3 Tbsp FreshLife sesame seeds Instructions 1. Toast the crunch π₯ Place peanuts and sesame seeds in a dry frying pan. Toast over medium heat, stirring frequently, until sesame seeds turn pale golden (≈ 3–5 mins). Set aside to cool. 2. Prep the slaw π₯ Toss green cabbage, red cabbage, grated carrot, sliced capsicum, spring onions and chopped coriander together in a large bowl. 3. Shake up the dressing π« Add all dressing ingredients to a screw-top jar. Shake shake shake! π Taste and adjust – more honey for sweetness, more sesame oil for nuttiness, or extra salt if needed. 4. Dress & toss π Pour dressing over the slaw and mix until everything is beautifully coated. 5. Finish with crunch β¨ Sprinkle the toasted peanut-sesame mix generously over the top right before serving.
